Hurray!!!

After last night’s Salmon & Potato cake recipe disaster, I was a little nervous with cooking brunch today. But it’s a Sunday and it’s dreary outside, and I reaaaaaally felt like some Ricotta Hotcakes with fresh bananas a la Bill’s style. It’s $16 a dish there, which is an utter ripoff since you can buy all the ingredients for a fraction of the price – $2 for the ingredients, to be exact!!!!

It turned out perfectly, helped along by my happy new Tefal fry pan that Chris bought me last week πŸ˜€ Takes only about 10 mins to prepare the mixture, and 5 mins to cook. It’s loooooovely! The hotcakes were all fluffy and moist, with a beautiful flavour that isn’t too rich. The bananas and maple syrup drizzled on top just topped it all off.

Ricotta Hotcakes with fresh bananas & maple syrup
This plate costs $2 to make…..

… compared to this bill’s version below, which costs $16


Ricotta Hotcakes with fresh bananas & maple syrup (serves 2)

2/3 cup ricotta cheese
1/2 cup milk
2 eggs, separated
1/2 cup plain flour
1/2 tsp baking powder
salt
butter

1) Mix ricotta, milk and egg yolks
2) Sift in flour, baking powder and a pinch of salt. Mix.
3) Beat egg whites until stiff peaks form (5+ mins). Fold in mixture.
4) Melt some butter in pan. Cook hotcakes until brown on each side.
5) Serve with butter and maple syrup and bananas

It makes a really really filling brunch though, so I think I’ll be having a light lunch. Heading off to Chatswood with Chris and after lunch we’re catching a movie. Hurray for lazy Sundays πŸ™‚

Oooo his cookbooks rock! I have one and have used so many of the recipes.. and it’s so much cheaper cooking it yourself than paying $$ for it @ bills :X

Oh i LOOOOOOOOOOOVE Canandian maple syrup!!! It’s the best by far.
The syrup I used is “maple-flavoured” syrup, which is actually quite crap, but it’s hard to find proper maple syrup in Sydney, urk..

yes.. I LOVE 100% pure Canadian maple syrup too.. it’s the best!! that artificial stuff can’t compare at all (yes, it is crap. haha)

when we visited Sg in 2004, we brought along 7 500mL bottles of maple syrup for our friends.. they all loved it! and we brought some maple cookies too!

I hope you’ll be able to find some maple syrup in Sydney.. good luck! πŸ™‚

Just being cheeky. Sounds like a great recipe to try out – especially since my boyfriend is awesome at pancakes and I’d love to turn the tables sometime!

I’ve never heard of Bills though, it sounds kind of posh at $16 a pop. Recommended though?

definitely try it out! So easy to make. bill’s is really famous, definitely worth a try. Their scrambled eggs are famous too and they’re $11 which is really reasonable IMHO! I’m sure you’ll love visiting there πŸ™‚

Yep – new shoes, a couple of jeans, a couple of longsleeve shirts.

Spot on about Chatswood. It’s like a mini version of the city.

They tasted the same IMHO! bill’s come with “honeycomb butter” but i was too lazy to make it, so I put normal butter and maple syrup instead. Pretty much the same anyways πŸ˜›
