Hurray!!!
After last night’s Salmon
It turned out perfectly, helped along by my happy new Tefal fry pan that Chris bought me last week π Takes only about 10 mins to prepare the mixture, and 5 mins to cook. It’s loooooovely! The hotcakes were all fluffy and moist, with a beautiful flavour that isn’t too rich. The bananas and maple syrup drizzled on top just topped it all off.
Hotcake batter
Ricotta Hotcakes with fresh bananas & maple syrup
This plate costs $2 to make…..
… compared to this bill’s version below, which costs $16
Ricotta Hotcakes with fresh bananas & maple syrup (serves 2)
2/3 cup ricotta cheese
1/2 cup milk
2 eggs, separated
1/2 cup plain flour
1/2 tsp baking powder
salt
butter
1) Mix ricotta, milk and egg yolks
2) Sift in flour, baking powder and a pinch of salt. Mix.
3) Beat egg whites until stiff peaks form (5+ mins). Fold in mixture.
4) Melt some butter in pan. Cook hotcakes until brown on each side.
5) Serve with butter and maple syrup and bananas
It makes a really really filling brunch though, so I think I’ll be having a light lunch. Heading off to Chatswood with Chris and after lunch we’re catching a movie. Hurray for lazy Sundays π
Heya! I made your version to feed 2 people this morning for our breakfast, and you’re right, they are deeeelish…and filling!
woo hoo! Yeah, they’re super good and can practically take you through lunch, haha

i think i’m off to buy bill’s cookbook. your homemade ones look soooooo good, id definitely pay $16 for yours π
Oooo his cookbooks rock! I have one and have used so many of the recipes.. and it’s so much cheaper cooking it yourself than paying $$ for it @ bills :X

Yours look as good if not better than the restaurant version !
Hehe thanks!! And if I factor in the price, then I DEFINITELY prefer the homecooked version π
I’ve been craving pancakes for a while now. Those look very tasty!
They’re so much better than regular pancakes too! All fluffy and moist :)~~~~
looks delicious!! I love pancakes and I love maple syrup!! π
we have tons of maple syrup here in Canada hehe
Oh i LOOOOOOOOOOOVE Canandian maple syrup!!! It’s the best by far.
The syrup I used is “maple-flavoured” syrup, which is actually quite crap, but it’s hard to find proper maple syrup in Sydney, urk..
yes.. I LOVE 100% pure Canadian maple syrup too.. it’s the best!! that artificial stuff can’t compare at all (yes, it is crap. haha)
when we visited Sg in 2004, we brought along 7 500mL bottles of maple syrup for our friends.. they all loved it! and we brought some maple cookies too!
I hope you’ll be able to find some maple syrup in Sydney.. good luck! π
We’re not getting the real thing? I had no idea!
So now I’m curious… what’s Canadian maple syrup like?
there are 2 types of syrup.. the imitation syrup (made with corn syrup, sugar, artificial maple flavour, etc) and the authentic syrup (made with 100% pure maple syrup)

$2… Even though bananas are going at a reported $11.99/kilo atm? π
Just being cheeky. Sounds like a great recipe to try out – especially since my boyfriend is awesome at pancakes and I’d love to turn the tables sometime!
I’ve never heard of Bills though, it sounds kind of posh at $16 a pop. Recommended though?
Hehe I already had the bananas, so they don’t count π
definitely try it out! So easy to make. bill’s is really famous, definitely worth a try. Their scrambled eggs are famous too and they’re $11 which is really reasonable IMHO! I’m sure you’ll love visiting there π
that looks deeeelish! i have to try making that someday!
ya! Hope you like it too.. it’s so quick and easy π
π― That looks YUM-MY!!!
easy to make too!! So satisfying π

The hotcakes look identical! I’ll try that soon. π
Their easy to make and soooooo cheap too! Hope you like it π

I just got home from Chatswood! My mum wanted me to get new clothes. Urgh.
Heh did you end up buying anything? I love Chatswood.. so much food and shopping π
Yep – new shoes, a couple of jeans, a couple of longsleeve shirts.
Spot on about Chatswood. It’s like a mini version of the city.
Your pancakes look exactly the same as the $16 ones except there’s more with yours! Bananas. mmmm. π
They tasted the same IMHO! bill’s come with “honeycomb butter” but i was too lazy to make it, so I put normal butter and maple syrup instead. Pretty much the same anyways π

It was a reaaaally nice brunch when it’s cold and raining outside! *rubs belly*
Nicely done! Looks tasty!
The ricotta in the hotcakes were a winner.. much nicer than regular hotcakes π

they were so filling though! only 3 stuffed me up :X But yummy π
Are you trying to be the Australian Martha Stewert?
Didn’t she get some kinda criminal conviction, though? π
