And there’s my Shepherd’s Pie I made the other evening…. super-spiked with veggies. A LOT of veggies. There was fresh carrots, broccoli and mushrooms chopped into there, in a 50/50 ratio with lean beef mince and onions.

I just pan-fried it all up, laid it into a baking dish, topped it off with mashed potato, and then a layer of shaved parmesan and cheddar cheeses. Popped it into the oven for about 20 mins and ta dah!! 

Easy peasy to make, freezes easily, and goes down very well with the kiddos.

Oh. I forgot. Gotta have a chilled glass of wine whilst waiting for it to bake in the oven! 😉
