I made some Singapore peanut cookies last week, because I’ve been missing all those awesome Chinese New Year cookies we have in Singapore. These are not peanut butter cookies, which a few people thought I was making. Those are the American version, THESE are the Asian version πŸ™‚

These particular peanut cookies are always served at Chinese New Year, and I love the round little balls that crumble in my mouth once I bite in. They actually have a creamy and buttery flavour, which comes from the peanuts themselves, since no milk or butter is added – AT ALL. You’ll be surprised that only 5 ingredients are needed for this recipe! It’s a total cinch to make, so easy that the longest part is the baking time πŸ˜‰ The cookies also store in an air-tight container for up to a week, and make a great snack. Not too unhealthy too, considering it’s almost entirely just made of ground peanuts.

I brought a batch of these to a friend’s potluck dinner party, and they made for a great little dessert and snack. Co-incidentally, because none of us were actually planning it, ALL the dishes were from South-east Asia! So my peanut cookies fit right in. It was a brilliant night πŸ™‚


Just 5 easily-found ingredients is all you need

Grind 300g of salted roasted peanuts in 2 batches until fine.
Put into a big mixing bowl.

Sift the 250g plain flour and 200g castor sugar into the bowl.
Mix together with the blended peanuts until well combined.

Drizzle vegetable (I used corn) oil in as you knead, until the sugar melts and
you can roll the mixture up into a ball without it sticking or crumbling

My peanuts were already oily when I bought them, so I used just 100ml of oil. You
may use up to 200ml if your peanuts were originally un-oiled

Roll the mixture into small balls then place on a lined baking tray.
Press a half-peanut into the top, then glaze it all with a beaten egg, using a brush.

Bake for 15-20 mins (10mins if using fan-forced) until golden brown

Those look delish (and crunchy!) but have you ever tried to made North American peanut butter cookies? I have a recipe that seems bizarre but which really works and you only need 3 ingredients!

Take one cup peanut butter (chunky is best, I think)
1/2 cup to one cup sugar (I prefer less sweet – so I use 1/2 cup)
1 egg.

That’s it – NO flour or baking powder. They make wonderful cookies. Bake at 350 for about 10 minutes but if you take them out when they are still slightly underdone, you get soft cookies and if you leave them in till firmer you end up with crunchy cookies – so the time will really depend on your oven and if you like them hard or soft.

omg SO GOOD. I’ve never tried peanut butter cookies, but these actually look even better. Peanut cookies aside, where do you usually buy peanut butter? What brand do you buy?

I get peanut butter at City shop, I like Skippy’s (australian). but the Chinese supermarket also sells skippys I think with rice krispies inside – that is AWESOME!

The peanut cookies look awesome. I never knew they were so easy to make… kudos to trying your hand at such a traditional recipe. I’ve been a bit of a lurker and would just like to say I really enjoy reading your Shanghai escapades πŸ™‚
