Been trying to incorporate more veggies into my food, but it’s really tough. So decided to make Bruschetta. I wanted to make it from scratch so I could use all-fresh ingredients. It turned out really well (if I do say so myself!) – the flavour was mild yet with the beautiful taste of fresh herbs infused through the tomato. Very satisfying and super healthy too!


Marinating the mix

Fresh Bruschetta


Fresh Bruschetta (serves 2)

4 Roma tomatoes
1 tsp garlic, mashed
2 tbsp extra virgin olive oil
1/3 cup basil leaves, chopped
Few mint leaves, chopped

1) Cut 3 tomatoes in half, place on baking tray and drizzle with a bit of olive oil and salt/pepper. Roast 20 mins.
2) Remove and cut out seeds/juice then chop. Put in bowl and add the 4th tomato chopped fresh.
3) Add extra virgin olive oil, garlic, basil and mint. Marinate at room temperature for 1-2 hours.
4) Serve on hot bread and top with salt/pepper Parmesan cheese.

Always wanted to visit far Australia where it is a lot of a kangaroo and koal’s (mini bears).

Whether it is possible to add eggs in this meal?

Australia is lovely, you should visit ๐Ÿ™‚

I guess you can add some sliced boiled egg, but traditionally bruschetta doesn’t have egg!

I heard, once a year in Australia (I do not know what city)
Pupils or students and so mark a holiday gather,
Have fun, dance, kiss, laugh and drink
That simply the head goes around (as speak in Russia – ะพั‚ะฒะฐะป ะฑะฐัˆะบะธ – otval bashki)

Do you like salsa? It’s similar to your bruschetta. I make mine with roma tomatoes, sweet red onions, cilantro, Vietnamese red hot sauce, minced garlic and garlic salt. This tastes really good when you top it on grilled chicken or grilled white fish. *^^*

Mmmm yes but I normally just buy the bottle version ๐Ÿ˜‰ I’ve never made it fresh, do you just mix all the stuff and thats it, no cooking?

That looks REALLY good and you’re right, it’s an excellent way to add vegetables to any meal. Another easy option is to take spaghetti sauce and add squash, peppers, tomatoes, and other vegetables to the sauce and then just pour it all over pasta. You can also make a bunch and then freeze some of it for future use or put some in the fridge for multiple meals.

it’s as juicy and appetizing looking in real life, I love the colours ๐Ÿ˜€

Great idea about the pasta sauce, it sounds delish AND healthy!

On an episode of “Good Eats”, the guy suggested rubbing garlic on the bread after toasting it. ๐Ÿ™‚
