Been trying to incorporate more veggies into my food, but it’s really tough. So decided to make Bruschetta.
Marinating the mix
Fresh Bruschetta
Fresh Bruschetta (serves 2)
4 Roma tomatoes
1 tsp garlic, mashed
2 tbsp extra virgin olive oil
1/3 cup basil leaves, chopped
Few mint leaves, chopped
1) Cut 3 tomatoes in half, place on baking tray and drizzle with a bit of olive oil and salt/pepper. Roast 20 mins.
2) Remove and cut out seeds/juice then chop. Put in bowl and add the 4th tomato chopped fresh.
3) Add extra virgin olive oil, garlic, basil and mint. Marinate at room temperature for 1-2 hours.
4) Serve on hot bread and top with salt/pepper Parmesan cheese.
This looks really yummy. I’ll try the recipe.

Delicious! I’m a huge fan of bruschetta, but I always feel bad ordering it when I’m dining out because its so simple to make.

whats the difference between normal tomatoes and roma tomatoes? can i used normal kinda tomatoes?
You can def use normal tomatoes 🙂 I THINK Roma is a bit sweeter so it’s used for salads?

I guess you can add some sliced boiled egg, but traditionally bruschetta doesn’t have egg!

That simply the head goes around (as speak in Russia – отвал башки – otval bashki)

Do you like salsa? It’s similar to your bruschetta. I make mine with roma tomatoes, sweet red onions, cilantro, Vietnamese red hot sauce, minced garlic and garlic salt. This tastes really good when you top it on grilled chicken or grilled white fish. *^^*

It’s super easy, very similar recipe to your bruschetta. No cooking required so it’s fresh. *^^*

That looks REALLY good and you’re right, it’s an excellent way to add vegetables to any meal. Another easy option is to take spaghetti sauce and add squash, peppers, tomatoes, and other vegetables to the sauce and then just pour it all over pasta. You can also make a bunch and then freeze some of it for future use or put some in the fridge for multiple meals.
it’s as juicy and appetizing looking in real life, I love the colours 😀

I’ve never had veg lasagne.. I like the beef ones, hehe
