Very randomly decided to make Maple Syrup Cupcakes.. solely decided upon the fact that I found some spare flour in the pantry and a bottle of maple syrup in the fridge that I wanted to use up 😛 I tried to improvise a recipe that made as simple as possible, as in, nothing more than taking 10mins of my time. Turns out, my recipe really does work and the cupcakes were SO MOIST and a lovely hint of maple syrup. I originally was planning on having them served with butter, or to make a maple syrup icing to go on top.. but they were so moist and delish that they were best eaten plain.
Totally recommend this recipe if you want to whip something up really quickly with the most minimal effort you’ll ever find in a baking recipe 😉 Plus, they were SO yum, I polished off 5 in just a few mins! WHOOPS 😉
Beating the mixture
Ready to go into the oven
Freshly baked moist Maple Syrup Cupcakes
Maple Syrup Cupcakes (makes approx 15 small cupcakes)
125g chopped butter, room temperature
1 cup self-raising flour
1/3 cup dark brown sugar
1/4 cup maple syrup
2 whole eggs
1) Place all ingredients into a mixing bowl, beat until pale and smooth
2) Bake in oven at 180 celcius for 10-15 mins (ready when skewer test comes out almost clean)
thanks for the recipe! i’ve been wanting to try it for ages but never got around to buying maple syrup. it’s really super easy and fast! the only step that took a little longer was waiting for the butter to get to room temp. LOL
Glad it worked out! i microwave the butter on low heat for a few secs each time, to get it to warm up quicker 😛

Silly question but you can use white sugar in place of the brown sugar right? It’s only for colour, isn’t it?
Ooo I’m not sure.. darkbrown sugar is really really moist and fudgey with a strong caramel scent, which is why I like to use it when baking. but maybe try a batch with regular sugar and see if it makes a diff? Or add more maple syrup and halve the amount of white sugar so it won’t be too dry
