I love cooking seafood, but never seem to get a chance to do so often. So decided to make a really simple Prawns, Scallops & Chilli Pasta in a Basil, Tomato, Spinach and Olive Oil sauce. Takes about 20mins to cook from start-to-end, basically as long as the pasta takes to cook. I’d recommend it especially if you’re having people over for dinner, as it’s minimal preparation, pretty healthy and super tasty!

Prawns, Scallops & Chilli Pasta in a Basil, Tomato, Spinach and Olive Oil sauce (serves 2)

Extra virgin olive oil
2 cloves garlic, mashed
1 tomato, cubed
1 long red chilli, chopped
10 medium prawns
10 scallops
Basil leaves, torn
Spinach leaves, torn
2 lemon wedges
Pasta, cooked

1) Heat garlic in olive oil over medium heat
2) Add tomatoes, chilli, prawns scallops. Cook through.
3) Add basil and spinach and toss.
4) Serve on hot pasta drizzled with extra virgin olive oil, lemon, salt/pepper.
