Had some random ingredients in the fridge I wanted to use up.. and felt like something simple after that crazy Food & Plonk degustation meal, so decided to make a Stir Fried Noodles with Roast Chicken and Vegetables. It was pretty much whatever I dug out of the fridge and wanted to use up, but it was insanely cheap at around $10 and that was enough to feed 4. Bargain! Great also because it’s so easy to throw everything into the wok to whip up a super-quick and tasty meal.


Stir Fried Noodles with Roast Chicken and Vegetables


Stir Fried Noodles with Roast Chicken and Vegetables (serves 4)

3 noodle cakes, cooked according to packet directions
1 small carrot, chopped and lightly boiled
1/2 red capsicum, chopped
1/2 small onion, chopped
2 eggs
1 tsp garlic, mashed
Basil leaves, torn
Roast chicken (eg. Oporto’s roast chicken with chilli sauce)

1/2 tbsp Maggi sesame sauce
1/2 tbsp black sauce
1 tsp sesame oil

1) Cook garlic, carrot, capsicum and onion in wok with oil until slightly softened
2) Push veg to one side, put eggs in the other side and scramble until cooked
3) Add in noodles, roast chicken, basil leaves, sauces and sesame oil
4) Sprinkle with fried shallots and serve with Maggi garlic chilli sauce
