This isn’t my original recipe, I found it in Slimming & Health magazine, one of their “quick meals”, but I modified it quite a bit to suit my taste πŸ˜› The preparation actually takes longer than the cooking! All up, it took about 20-25 mins to do everything, inclusive of washing the dishes (eg. could wash chopping board and knife whilst waiting for eggs to boil). Really simple and it’s easy to make a batch for 4 and save it in the fridge πŸ™‚ It’s really healthy but satisfying.. remember to make your portions smaller than usual – the potatoes are really filling!

Unfortunately, the photo didn’t turn out well.. it looks kinda messy πŸ™ It’s tough photographing real food that you’re about to eat, since you can’t lacquer them or pour glue on them, etc, as I’ve heard food photographers do. Ah well!

Warm Potato Salad with Tuna & Herbs

500g small Desiree (pink) potatoes
4 spring onions, chopped
1/2 red capsicum, finely diced
1/2 red onion, finely diced
1/3 cup parsley, chopped
Sprig of mint, chopped
John West sweet chilli tuna chunks (can substitute with any others)
4 hard boiled eggs, chopped
1/3 cup low-fat mayonnaise

1) Boil unpeeled potatoes, then cut into segments. Place in bowl.
2) Mix in spring onions, capsicum, parsley, mint, onion.
3) Fold in tuna and eggs. Add mayonnaise and salt/pepper to taste.

wow i am amazed at how much patience you have to take photos of the cooking process and the final product!

i’m usually so hungry that it’s usually after i’ve already attacked my food, leaving it in a mess when i remember ‘hey, i should have taken a picture of it!’

Haha! THanks! I write wacky stuff sometimes, but mostly just boring stuff. I like traveling and dig sydney, maybe i will go back again soon.

My current girlfriend cooks a lot better then I do, as 5 star thai chef, tho I am more the exquisite beverage person (self trained.) =)

Its a small book, but very beautiful and clear.

yea i know! Today i tried so hard to eat healthy, only had 2 bowls of soup and one yaki udon. However I still ended up eating 5 ccookies and one scoop of vanilla ice cream just now! πŸ™

This salad looks yummy. I’m affraid poatoe salads are hard to photograph! You’ve inspired me to cook this tomorrow. Love Lauren
