I’m really really delighted with myself at the moment 😀 All thanks to a lovely, cheap, healthy and cute meal! I originally saw it posted on a blog somewhere ages ago, and thought “Hmmmm.. I should try that some day”. Today, I was on my way home from work and I had a Baker’s Delight Buy 1 loaf of bread, get 4 rolls free coupon, so I did just that! Using the rolls, I made Baked bacon, egg & ricotta buns.

The meal is SPECTACULAR, and SO easy to make! It also requires little/no washing up – bonus 😉 The buns turn really crisp yet still crumble in your mouth – the texture is just fabulous. And the egg and ricotta gives it that moistness, especially with the runny yolk. The bacon also gives it that kick of salty flavour – pure yumminess 🙂

Baked bacon, egg & ricotta buns, fresh from the oven

Beautiful mixture of flavours makes a kick-ass meal!


Baked bacon, egg & ricotta buns (serves 1)

2 bread rolls, insides removed
Small handful of diced bacon
2 eggs
3 tbsp ricotta
2 tbsp mozzarella cheese
Oregano
Pepper

1) Sprinkle bacon and ricotta cheese inside the rolls
2) Crack 1 egg carefully into each roll
3) Sprinkle with oregano and pepper
4) Bake at 180 celcius for 10 mins
5) Remove and sprinkle mozzarella cheese
6) Bake at 150 celcius for 4 mins

      OH haha you’re right, I didn’t even think about that, but it’s more like brekkie food isn’t it 😉

        To be honest the only time I eat breakfast food is *not* at breakfast time, so don’t mind me. 😉

      Yeah, no preparation or chopping required… and only the plate you ate on to wash up! 😛
