Bought some organic cous cous the other day and decided to cook that up and make a dinner of Lamb & Mint Rissoles with Tzatziki and Cous Cous.

I’d say the cous cous didn’t excite me at all. Perhaps I should have used more stock to cook it in, but it was really tasteless.. or rather it just tasted like cardboard or something. So bland and blah. However, Chris had it took and declared it “amazing”.. so go figure. I think I’d prefer it served with a stew or something sauce-y to make it more tasty.

The rissoles turned out well though! Fairly easy to cook though the preparation too awhile since I had to boil and mash the potatoes first. The great bit is that you can freeze the excess and just defrost and cook it up for a variety of dishes – they’d make great burgers, or broken up and served with pasta, or just served with a side salad. Great for pulling out of the freezer to cook when you just can’t be bothered to do much for a meal πŸ˜›

Lamb & Mint Rissoles with Tzatziki and Cous Cous

Sara Lee ‘Strawberry Cheesecake’ ice cream

Lamb & Mint Rissoles with Tzatziki and Cous Cous

2 medium potatoes, mashed
500g lean lamb mince
2 tsp garlic, mashed
1 white onion, finely chopped
1/2 cup fresh mint, finely chopped
1/3 cup fresh rosemary, finely chopped
2 small eggs
breadcrumbs
olive oil spray
salt/pepper

1) Mix mashed potatoes, lamb mince, garlic, onion, mint, rosemary eggs in a bowl. Add salt/pepper to taste.
2) Form into patties and roll in breadcrumbs
3) Spray fry pan with olive oil
4) Cook patties on medium heat until cooked through, flipping once
5) Serve topped with tzatziki (Greek yoghurt dip) and with cous cous

I’ve never tried lamb before. The one you made looks so yummy! Just curious…what does lamb taste like? Does it have a very distinct taste? Everything you cook looks so appetizing! Yummy! *^^*

I never used to like lamb – in it’s pure form (ie. cutlets, stew, etc) it does have a strong smell, like beef but a bit different. but now I’m just addicted to lamb!! It’s not really thaaaat diff to beef IMHO

Couscous is usually good mixed with other stuff in it, sort of like a salad. Look online for recipes – there are tons!
And you should also try spaghetti squash! It’s really easy to make, is low in calories and it’s a delicious substitute for pasta (plus you can have more and it doesn’t really matter!)

the rissoles looks amazing! Don’t you find it difficult to cook for 2? I always have problems with the rest of the raw ingredients. :p

Ya it’s a challenge sometimes, so I try to plan it such that any remaining ingredients can be ‘reworked’ into another dish the next night!
