FOOD, My recipes, Uncategorized BEEF & FETTA BURGERS WITH CHICKEN NUGGETS 5 June 2006

I had some random leftover groceries in my fridge:
* stray bread rolls
* a bit of beef mince
* a bit of chicken tenderloins
* spinach leaves
* really ripe avocado
* cheese
* Portuguese chicken seasoning

Was trying to figure out some kind of normal-looking/tasting meal that I could make, that would use up all the above leftovers. So I came up with Beef, Olive & Fetta burgers and Chicken Nuggets! It was still a bit of a random dinner, but it worked out πŸ™‚ I just added some mashed avocado and tomato and cheese to the burgers and voila! A really hearty meal. Not terribly healthy due to all the cheese, but still healthier than a McDonalds burger, IMHO..

And I just have to say this: putting fetta cheese in the meat patties was the best idea ever!! It makes the patties really smooth and smooshy, and gives a really lovely taste, yet doesn’t overpower the meat. It’s so yum πŸ™‚ The good bit is that the meal seems like Fast Food, but you don’t feel all sick and gluggy after eating it.. especially since I didn’t add any salt and it was all cooked without using any oil. The only unhealthy bit was the cheese, so you could always use less if you want it to be healthier..

Burger with beef, olives, fetta, cheese, avocado, tomato (serves 2)

200g minced beef
1/2 onion, chopped
1/2 clove garlic, mashed
5 seeded black olives, chopped
50g low-fat fetta cheese, crumbled
1/4 cup breadcrumbs
1 egg white
1/2 tbsp oregano
1 tsp paprika
pepper

1) Combine all ingredients in bowl, mix well.
2) Shape into balls and flatten
3) Cook in frypan until brown and cooked through
4) Serve on toasted bread rolls with avocado, cheese, tomato

Baked chicken nuggets (serves 2)

2 chicken tenderloins, sliced
plain flour
2 egg whites, beaten lightly
breadcrumbs
Some kind of seasoning mix (I used Portuguese chicken seasoning)
pepper

1) Toss chicken in flour, shake away excess
2) Coat chicken in egg
3) Dip chicken in breadcrumbs combined with garlic salt and pepper
4) Bake for 15 mins, turning once halfway

good on you for cooking so much lately!
I always go through my fridge and because i have beene ating so much take out lately everything is gross before I even get a chance to make an attempt at cooking it πŸ™
I will definately do something tomorrow though!

I love eating out, but it’s really satisfying to make a nice home-cooked meal πŸ™‚ tomorrow’s going out night though, I reckon!

heyy, i never thought to put black olives in my burgers… that sounds really good. yay! new recipe, i love trying new things, especially since i know it already works out great =D

It’s sooo much cheaper to cook hey? I’m actually cooking at home a LOT more now (ie. I never used to before, haha).. but it does take effort and the washing up. urk…
