Had some peanut butter and random ingredients lying around in the pantry, so I tried to devise a recipe that would use all of them πŸ˜› Ended up with some Peanut Butter & Chocolate Shortbread! It’s basically a buttery shortbread base, with peanut butter & chocolate smeared on top. Incredibly, incredibly easy to make and uses only a few ingredients, most of which you’ll probably find in a pantry.

They’re delicious – the shortbread is buttery and slightly salty, a beautiful contrast against the creamy chocolate & peanut butter mixture. Plus the crunch of the peanuts is divine against the crumbly shortbread, mmmmmm! Brought ’em to work to share around, but seriously underestimated and so only fed about 1/4 of the office, so felt a bit guilty when I get moaned at! They’re really rich, buttery, sweet and lethal.. so just one small piece after dinner is perfect. Mmmhmmm!

Peanut Butter & Chocolate Shortbread

2 cups plain flour
1/4 cup white sugar
1 stick butter, softened
1 tsp vanilla essence
1 tsp salt
1 cup crunch peanut butter
2 cups chocolate chips

1) Sift flour and sugar into a mixing bowl
2) Cut butter into small cubes then use hands to mix it and salt and vanilla essence into flour/sugar mixture
3) Flatten this onto a sheet of baking paper and bake at 180c for 15 mins until golden. Cool.
4) Heat chocolate and peanut butter in a saucepan until melted
5) Spread onto cooled shortbread and leave to cool at room temperature

hi beverly :o) thanks for the recipe, i made them yesterday and they came out soo gooood! except you’re absolutely right, ONE square is just enough. very very peanut buttery and chocolatey. i think next time i’ll change the frosting to a more lighter version. maybe add chocolate and peanut butter to whipped cream or a light frosting or something. THAT way you can eat more. muahahahaa

Wheeee! But yeah, perhaps next time use half the choc/pb so there’s less of it? I like lots of it though, I’m addicted to the stuff.. hehe
