Was on a bit of a baking kick recently and baked twice in one week.. First was a super-moist banana cake that I like to have handy in the fridge, because it makes a great snack as well as breakfast. Just cut off a slice, toast it up, and slather on lashings of salted butter – mmmm!!! Also fabulous with some creamy vanilla ice cream.

I also found this Martha Stewart recipe for a Chocolate, banana and graham cracker icebox cake, which I was keen to try out. I mean, just LOOK at those ingredients – how can you possibly go wrong?! It’s also no-bake, and pretty easy to make, apart from having to wait for it to chill. My only issue was that it was really really sloppy. The main chocolate filling never really hardened and was quite liquidy, so we had to eat it out of bowls. But it didn’t really matter because it tasted FABULOUS πŸ˜€

It’s not pretty enough to make as a dessert for parties or when friends come over, but it’s fantastic comfort food/dessert and very very tasty.


Bring 3 cups heavy cream to a simmer in a medium saucepan.

Add 5 large egg yolks (whisked). Cook, stirring constantly, until mixture is thick
enough to coat the back of a wooden spoon, about 8 minutes.

Immediately strain through a fine sieve set over 15 ounces of milk chocolate.

Stir until chocolate melts and is smooth.

Refrigerate about 4 hours, stirring occasionally until thick.

Spread 1 cup of chocolate mixture evenly into bottom of loaf pan (lined with cling wrap).
Top with a layer of graham crackers, trimmed to fit. Spread 1\2 cup of chocolate over
top and cover with some bananas. Repeat.
Cover with plastic wrap, and refrigerate overnight. Cut into slices.

Garnish with whipped cream and serve!
