Decided to make risotto again the other night.. poked around the supermarket to pick up whatever I could find that looked interesting. So ended up with a Tomato, Chorizo Sausage and Spinach Risotto. I only used 1 cup of uncooked Arborio rice, but that somehow made enough for about 3 full meals because of the sheer amount of ingredients I stuffed in there πŸ˜› Great comfort food, and it was tasty too.


Tomato, Chorizo Sausage and Spinach Risotto


Tomato, Chorizo Sausage and Spinach Risotto

1 cup Arborio rice
1/3 cup white wine
750ml chicken stock
1 tbsp olive oil
2 cloves garlic, crushed
1 onion, finely chopped
1 red capsicum, chopped
Handful of cherry tomatoes, halved
2 large Chorizo sausages, chopped
1 handful baby spinach, roughly torn
1/2 cup basil
Parmesan cheese, shaved

1) Heat olive oil in a large pot. Add garlic, onion, capsicum, chorizo.
2) Add rice and stir through. Add white wine.
3) Ladle warmed chicken stock in, one spoonful at a time. Stir constantly.
4) Just before cooked, add cherry tomatoes, baby spinach and torn basil leaves
5) Add salt/pepper to taste. Serve with Parmesan cheese.

Now that you mention chorizo sausage, have you tried the chorizo rolls at the Chatswood Thursday night stalls? Use plenty of the orange sauce. It’s not particularly spicy, but it’s *very* tasty.

YES they are so good! Terribly salty though, but I love ’em πŸ˜‰ I also lik ethe Malaysian stall with their $10 set.. the beef rendang is fab
