Just something for breakfast on the weekend..


Scrambled eggs with red capsicum and red onions


Scrambled eggs with red capsicum and red onions (serves 2)

4 large eggs
0.5 cups milk milk
Pinch of salt
1/2 tbsp butter
Diced red capsicum
Diced red onion

1) Cook capsicum and onion lightly for a minute. Set aside.
2) Whisk eggs with milk, add salt, capsicum and onion to mixture.
3) Melt butter, then add egg mixture.
4) When edges/bottom start to set, use a wooden spoon to fold the mixture.
5) Remove when almost cooked and serve on toast with Parmesan cheese and pepper.

Oh my, that looks delicious! I want to try it . . . but my doctor told me I’m supposed to be watching my cholesterol. πŸ™ Somehow, I don’t think an egg substitute will taste nearly the same.

Thank you for the awesome suggestion, I was thinking of what to cook for breakfast on Saturday (I know, early planner haha) and this looks perfect!
