If you’re a friend of mine and invited me out for a picnic/bbq or over to your place for a pot-luck meal, chances are you’ve had my Pasta Salad. It’s never always the same, since I always play it by ear and decide on ingredients at the last minute.. but it’s incredibly simple to make, requires pretty much no cooking, and everything is mixed together in 1 big bowl, so very little washing up. It’s fantastic to make in bulk for a party, or to just pop in the fridge and eat over a couple of days. Very convenient and it’s healty + tasty!

Hard boiled eggs
Parsley, chopped
Optional: avocado, red capsicum, red onion, basil, mushrooms

1) Combine all ingredients in a bowl and season to taste with salt & pepper
