Invited Chris’ brother over for dinner and at first, Chris suggested we go out to a restaurant down the road. But I decided I wanted to cook his brother something (vaguely) healthy since he always eats junk/crap food. Ended up being a 3-course meal! πŸ˜›

Started off with a Mediterranean Lentil Soup. Okay, I’ll confess. It was store-bought πŸ˜‰ One of those fresh soups that you can buy from the chiller at the supermarket. It was DELISH!! Just pop it in a saucepan and heat up.. it was spicy and the lentils made it a really substansial entree. Even Chris, who has always been “Eww. LENTILS?! I’ll never eat them”, declared the soup totally awesome. Will definitely re-buy. It’ll be fab as a light lunch with some hot buttered bread.

Mains was my homecooked Pasta with Fresh Ingredients and Olive Oil. Really healthy, IMHO! Well, not counting the Chorizo sausage. You can see the recipe HERE, except I used sausage instead of meatballs. Pretty easy to make, and utterly satisfying. I made so much that we couldn’t finish it off, whoops πŸ˜›

Dessert was homebaked White Chocolate & Macadamia Cookies. When we were grocery shopping over the weekend, I announced to Chris that I’d like to make cookies during the week. I asked “Should I buy the pre-made mix? Or make from scratch?” and he grinned and said “Homemade please!”. So that was that. It’s incredibly easy to make and they taste amazing hot from the oven – all buttery and sublime :)~

Chris called me a “domestic goddess” (haha) and I got a big THANK YOU and hug, so it was all worth it πŸ˜€

Ingredients for the pasta, sitting to infuse

Pasta with Fresh Ingredients and Olive Oil

Making White Chocolate & Macadamia Cookies

Mmmm… hot, fresh and buttery



White Chocolate & Macadamia Cookies

100g butter, softened
ΒΎ cup brown sugar
1 egg
1.5 teaspoon vanilla essence
1ΒΎ cups self raising flour
1 cup white chocolate drops
1/2 cup chopped macadamia nuts

1) Pre-heat oven to 150c
2) Cream butter and sugar in large bowl
3) Add egg and vanilla essence, mix well
4) Sift in flour, mix well
5) Stir in chocolate & nuts
6) Bake 14 mins or until lightly golden brown

how about the ingredients for that pasta, domesetic goddess?? is that spinach?? it’s such a bummer i wouldn’t be able to make THAT for a while. Stupid spinach ban in the USA… :p

There was a HUGE ecoli bacteria outbreak. Hundreds have gotten sick all over the country and one or two people have passed away. They have pulled all fresh and bagged spinach from the shelves. πŸ™ It’s such a bummer….They don’t really know where it came from either….
