Cooked again tonight.. a Seafood Alfredo Pasta that took just a few minutes to toss together (I short-cut on the ingredients). Easy peasy! And fantastic for a carb-monster like myself. Very, very satisfying :)~ Dessert was Fresh Strawberries & Honey Yoghurt, mmmmmmmm…

Not a very healthy meal (thanks to the, albeit ‘light’, butter and cream cheese).. but I’d been a bad girl and pigged out on Domino’s pizza for lunch, so I figured I’ll just go the whole hog and be bad for the day πŸ˜‰


Seafood Alfredo Pasta, served with a fresh garden salad (not pictured)

Fresh Strawberries & Honey Yoghurt


Seafood Alfredo Pasta (serves 2)

Seafood, chopped (tuna, salmon, calamari, prawns, mussels, etc)
100g Philadelphia light cream cheese
1/3 cup skim milk
1 tbsp butter
Basil
1/2 onion, chopped
1 tsp mashed garlic

1) Melt butter in fry pan over medium heat
2) Add onion and garlic, fry 1 min
3) Add seafood, fry until cooked through. Add basil leaves, salt/pepper.
4) Turn down heat to low, add cream cheese and milk, stir.
5) Remove from heat. Scoop onto pasta (cooked and tossed in virgin olive oil) and garnish with Parmesan cheese
(best served with a fresh garden salad)

That honey yogurt sounds yummy!!! Is it sold like that or did you make your own? I wonder if it would be the same as mixing honey into plain yogurt?

It came like that, it’s “honey buzz” flavour apparently. I think it’s the same as just drizzling some honey on top and mixing it in πŸ™‚
