Made 2 meals with the fresh seafood that we bought from the Fish Markets on Monday.. first one was Homecooked stir-fried seafood with noodles, in garlic/chilli/oyster sauce. It took a grand total of less than 5 minutes to make.. since all the effort was just in stir-frying the seafood, which cooked really quickly. I found it too spicy for my liking though, so I had to rinse off the noodles under some water, *lol*.. I overestimated just how much chilli I can handle (which is not much at all!). But it makes a lovely, quick meal.. and fresh seafood is always the best :)~

Homecooked stir-fried seafood with noodles, in garlic/chilli/oyster sauce

Egg noodles
Assorted seafood
1/2 red capsicum, sliced
1.5 tbsp Lee Kum Kee garlic chilli sauce
1 tbsp Lee Kum Kee premium oyster sauce

1) Cook egg noodles in boiling water according to packet instructions or until tender. Drain.
2) Stir-fry capsicum in some oil. Add seafood and cook through.
3) Add egg noodles and combined sauces. Stir well until heated through.

And for tonight, I had a bunch of scallops and decided to make a Homecooked breaded scallops with lemon & parsley fish, jullienned carrots and potato salad. I actually cheated as the fish was a frozen meal – Birds Eye make the best frozen fish! So yummy and cooks in a few mins in the microwave. Anyway, the scallops were really yummy :)~ And the breadcrumbs gives it that “deep fried” delicious taste, but it was healthy since I used olive oil to pan fry. Mmmmm!

Homecooked breaded scallops with lemon & parsley fish, jullienned carrots and potato salad

Fresh scallops
1/4 cup flour
salt
1 teaspoon paprika
1 egg
1 tbsp water
fine dry bread crumbs

1) Wash and dry scallops.
2) Combine flour, salt and paprika in a bowl. Whisk eggs and water in another bowl.
3) Dip scallops in the flour mixture, then dip in egg, then in the bread crumbs.
4) Pan fry in hot oil until nicely browned, about 2 minutes.

Oooh I did a project on Unilever’s Birds Eye before! We bought the fish fillet (i think) and cooked it for our lecturer to sample as part of our presentation. Wish seafood’s much cheaper here!

Scallops! Yummmmmy!!! We can’t get fresh scallops in Hawaii, only frozen ones. *sigh* BTW…I think you were a chef in your previous life. Hehe… πŸ˜€

Aww thanks! i”m using a Casio Exilim 3.2mp.. it’s obselete now though πŸ™ I really want to get the new one!
