The race results for the Mother’s Day Breast Cancer charity run were released. I’m so so so disappointed I clocked in at 27:13 – didn’t realise that the timing started when the gun went off and not when we actually crossed the starting line (which took a good few minutes since it was so packed). Ahhhhh wellll… my excuse is that I swear I’d have done better if it was less crowded so I could’ve run faster! πŸ˜›

The official pics also got released tonight. They obviously think Chris is more photogenic than I am since they had pics of him and none of me πŸ˜›

And here’s a recipe for a really easy & DELICIOUS dinner I cooked tonight. It’s really really tasty and best served with some plain steamed veggies or a fresh salad. Makes perfect comfort food :)~

SPINACH, FETTA & RICOTTA PIE (serves 4)

8 large spinach leaves
30g butter
1 onion finely chopped
125g ricotta cheese
125g feta cheese
60g tasty cheese
4 tablespoons grated Parmesan cheese
4 eggs lgihtly beaten
1/4 teaspoon ground nutmeg
freshly ground black pepper
8 sheets filo pastry (room temperature)
3 tablespoons olive oil

1) Steam spinach lightly. Chop finely.
2) Melt butter and cook onion until golden.
3) Combine onion, spinach, ricotta, feta, tasty, Parmesan cheeses.
4) Fold in eggs, nutmeg and pepper.
5) Layer 4 sheets of pastry, brushing oil between each layer. Place in oven dish.
6) Spoon in spinach/cheese filling.
7) Layer remaining 4 sheets of pastry (with oil inbetween each layer). Brush top with oil.
8) Bake at 200c for 40mins

Haha I don’t really have any! Just blunder along as I go.. I do enjoy cooking though, I’d do it a lot more if I had a fully-stocked kitchen and a lot more time..

I’ve had the filo with feta and ricotta before and it’s very good. I might have to “borrow” your recipe because I’d like to know how to make it. Yummmmmmmm!!!!
