FOOD, Uncategorized CORN FRITTERS & SALAD 2 March 2006

Tonight, I had an absolutely, drop-dead fantastic, satisfying meal. And get this:

1) I cooked it myself
2) It was vegetarian

I know!!!!!!!!!! Amazing huh?!?!?!? So ladies and gentlemen, I present to you:


Corn fritters with avocado salsa, served with spinach salad


I’m still quivering over how good this is.. my stomach is practically hugging me πŸ˜€ Everything was just perfect, and I’m still in utter disbelief that this is a 100% healthy vegetarian meal! It’s like the entire’s day’s worth of veg intake in one meal.

CORN FRITTERS WITH AVOCADO SALSA, SERVED WITH SPINACH SALAD
(serves 2)

1 420g can corn kernels
1/2 red onion, chopped
1/3 red capsicum, chopped
1/2 egg
1/2 cup coriander leaves, chopped
1/2 teaspoon baking powder
1.2 tablespoons plain flour
salt/black pepper

Avocado salsa (just combine everything in a bowl)
1 avocado, mashed
sprinkling of coriander leaves
1 tablespoon chopped spring onions
dash of tabasco & lemon
salt/black pepper

Spinach salad
2 handfuls of baby spinach
1 tomato
2 boiled eggs
salad dressing of your choice

1) Blend together half the corn, onion, capsicum, egg, coriander, flour, baking powder, salt, pepper. Only quickly, so it’s not too smooth.
2) Add remaining corn and stir with a spoon to combine
3) Heat 1 tablespoon of vegetable oil over medium/high heat
4) Drop 1-3 tablespoons of mixture into the pan to make 1 fritter
5) Cook for approx 1-2mins each side
6) Drain on paper towels
7) Serve with avocado salsa, and spinach salad

It looks long, but it’s easy to make, took me about 20 mins.. plus it makes a cheap meal too!! That, combined with my 7km non-stop uphill jog home, makes today a wonderfuly healthy day. Woo hoo!

I’ve only had them once before at a restaurant and they were super expensive.. which is dumb cos the ingredients are all so cheap! 😑

Isn’t that vegan.. when eggs can’t be eaten?? No idea really.. for me I consider vegetarian someone that doesn’t eat meat/flesh πŸ˜›

I’m pretty sure it’s not. I was a vegetarian for two and a half years and my mom for nearly four.

Most vegetarians see it as eating “baby chickens.” Therefore, it’s like eating meat.

And you’re right, vegans don’t eat eggs, cheese or anything that has any type of animal involved.

Which is weird.

Because it’s not like you kill a cow to get it’s milk. Heh. But I guess they are really weird about the whole, “They give cows aritifical stuff to make them produce milk and they hurt them and blah blah.” Haha. I don’t know. I never understood being all animal crazy like that. But -shrugs- Not the reason I was vegetarian. WOO.

it’ll be tough to be a vegan.. it rules so much food out and will be hard to go to restaurants! It’ll be hard enough for me to be a vegetarian (ie. impossible), so I wouldn’t even consider being vegan, heh!

The only other time I’ve had corn fritters is at Bill’s.. and I have to say, these are quite comparable, and healthier toO!

They’re easy to make too, and really really tasty.. and Chris liked them – he normally would totally freak out and eating only veggies for dinner πŸ˜‰

So I thought I would comment more… and I just wanted to say that every time I read a new recipe or food that you’ve tried out or all the exercize, I am so proud! I went through the same transition into a healthier lifestyle a few years ago and let me just say that you are blowing me out of the water with how much effort you have, it really says a lot in comparison to those people that go on a one-week diet and then can’t handle it, I think it’s great that you’re the type of person that can make that type of change and sustain it! I have some good healthy recipes so I will try to find them and post them sometime soon

I gotta admit though, it’s easy to *start* being fit, but it’s super hard to maintain it.. it takes helluva lot of determination and I find it really hard. But I’m trying πŸ™‚

And oooo I would love healthy recipes! I’ve been so bad before that I’m a total newbie when it comes to cooking well:X

That looks fabulous! I admit I do love veggies and can eat a whole meal of them… they can be totally exciting but you gotta find the right combo and recipe or its just a boring old boiled potato and sagging green green bean staring back at you πŸ™‚ and thats just icky!

I am going to make the corn fritters – its so funny cause about a month ago i wanted to make them and have a recipe from a cousin. The recipe is outrageously NOT healthy like this one so I’m so glad you posted it. Who knew I’d find it on your journal????

As an aside… I did the calculation from C to F degrees and wow…its pretty warm there huh? I was going to ask you if you wanted me to make you a scarf for the winter!!! But sheeeeesh! thats a bit silly i think!

I generally hate veg.. so it’s a big deal to me to start enjoying them I guess πŸ˜›

Haha what was the previous recipe like that made it unhealthy? And yes, ironic that my journal would have a healthy one, *lol*!!

Awwwww that’s so nice of you!!!! Our office is always freezing so we bring in pashminis and scarves, haha. We’re going into winter now and I personally find it really cold, but most Australians don’t πŸ˜‰

That looks delicious! I’ve made similar fritters including mashed up feta cheese, which is really yummy – you should try that the next time πŸ˜‰

Ooo I’ve never eaten feta cheese before – I always avoided it cos I like Brie or Camembert.. what does feta taste like??

I’m having a blueberry muffin now…hehe, is that terribly unhealthy? πŸ˜›
